I stopped by a very special winery in Portugal called Herdade do Portocarro  in Torrão. It's perfectly nestled on the border between the Peninsula of Setubal and the Alentejo, near Lisbon. There I met José Mota Capitão, the owner and winemaker.

Jose is wholeheartedly committed to the crafting of wines known for their elegance and character. Graduated in Agricultural Engineering, Jose’s first love was actually rice. But the production of wine took over a few years later thus becoming Jose’s passion and joy ever since. Nominated in 2015 and awarded in 2016 as Portugal’s Best Wine Producer, he is behind the Herdade do Portocarro project. Based on a philosophy of production of fine wines in limited and exclusive quantities, his wines are aimed at the discerning connoisseur who seeks to taste the difference. He is credited with the recovery of nearly extinct indigenous grapes (Sercial, Boal, Galego Dourado) - producing exquisite white wines - and continues his experiments with selected Portuguese classic varietals (Arinto, Antão Vaz, Touriga Nacional, Touriga Franca) with a touch of Cabernet Sauvignon, Petit Verdot and Sangiovese. Acidity and terroir are José’s magical ingredients in wine crafting.
